Taking care of the fish after the catch is crucial and why we practice the Japanese art of nerve destruction (Shinkei-jime and Ikejime). This prolongs the freshness of the meat and dispatches the fish humanely.
After Shinkei-jime, every catch is quickly bled and put into our 960 quart salt-brined ice coffin to bring the temperature of the meat down as rapidly as possible. This results in a premium sushi grade product that will maximize the taste of the meat while improving storage life. The difference is astounding!
Due to the size of the fish we target, we are unable to process the fish on the boat. We have contracted a professional 3rd party fish processing companies that will pick up your catch, clean and vacuum seal all the meat per your preference.

What better way to celebrate a catch of a lifetime than with an actual full sized fish print of your exact catch. Our crew has practiced the traditional Japanese art of Gyotaku using non-toxic edible ink to document the fish we have caught. Your catch will be imprinted, touched up, stamped and then mailed to your home.
